marinade:
shiner bock beer
pinch of sugar
salt
paprika, to coat each steak
garlic powder, to coat each steak
black pepper, to coat each steak
cooking oil, to coat each steak
directions:
lay steaks on a flat surface. lightly sprinkle dry ingredients onto the surface of each steak until the steak is completely covered. rub dry ingredients into the steak by hand. lightly pour cooking oil onto steak and rub into steak with hands. flip steaks over and repeat the same process on the other side. place steaks in an airtight container and refrigerate. let steaks marinate in rub no more than 4 hours.heat large skillet over high heat with cooking oil. nick does the water droplet test to see if its hot enough. if it sizzles, it's ready. lay the steak in skillet and brown on each side. here is my hot chunk of man steak searin' it up:
remove the steaks from the heat, set aside. it should be brown on each side, but raw in the middle:
lower the heat to medium and finish cooking the steaks. nick did about 5 minutes per side to finish cooking. we used to have a meat thermometer, but i forgot it in a roast or something at our old apartment and the stick thing warped from the heat. yeah, that happened.
nick had told me a pretty sweet way to tell what degree the steak is cooked:
when your hand is in an open, relaxed state. press the large thumb muscle between the thumb and index finger, and it will feel like a rare steak. stretch out your hand. press the same muscle and it will feel like a steak cooked to medium doneness. clench a tight fist, and the thumb muscle will feel like a well-done steak. thanks, nick.
on the side, i cut up one each of red/green bell pepper, yellow onion, tomato, and a few mushrooms. i then just put them in the skillet with some olive oil, salt and pepper and cooked them. i dont like my veggies mushy - you loose all the vitamins. and i just boiled some red potatoes.
it is amazing how well nick can cook. the first time i tried - it was horrendous. nick said, "oh, i'll do it." and whipped up all these ideas and tricks for apartment steak. humph.
