makeshift skinny lettuce wraps

so, nick woke up this morning and his first words from his mouth was, "i'm gaining weight. i want to eat healthier. all i'll ever eat from now on is baked chicken." if i had a glass of wine within reaching distance from my side of the bed, i would have downed the entire glass. my husband is 5'9" and barely pushing 150 lbs. notice, left.
i cook healthy. well, relatively. burgers were one thing - and i doubt i'll ever do it again. but i have never been one of those wives that cooks hamburger helper or sloppy joes every night. hell, i had my first EVER sloppy joe earlier this past year. but i definitely dont make steamed tofu with low sodium canned spinach. especially since nick would never come near either of the two and his favorite thing ever is macaroni and cheese.
so i decided upon making lettuce wraps. purely because i have a large head of lettuce that was about to go bad. (that is how most things leave the fridge, they go bad.) and i have to admit. i am proud of myself. i made my mind up that i was not going to get out of my leggings and wife beater all day long. and that sure as hell didnt include going to the grocery store. i found a recipe online for lettuce wraps and make shifted my way through it without having the majority of the ingredients that was needed. well, at least the important ones - like, soy sauce. ere, i go:


INGREDIENTS:
1 head of iceberg lettuce
1 pound ground chicken breast (now, i didnt have it, so i used regular chicken breast and cut it into tiny chunks)
1 large onion -- chopped
1/2 Cup peanuts, chopped (optional)
2 tablespoons minced garlic
1 tablespoon reduced-sodium soy sauce (didnt have that either)
1/4 cup hoisin sauce (didnt have this)
1 tablespoon rice vinegar
2 teaspoons Asian chili pepper sauce
1 can (8 ounce size) sliced water chestnuts -- drained, finely chopped (opted out, i hate them.)
1 bunch green onions -- thinly sliced (didnt have it, either)
2 teaspoons Asian sesame oil


rinse lettuce leaves, keeping them whole. set aside to drain.

i cut the chicken into tiny chunks, but if you have ground chicken, its easier. it actually doesn't really matter. scratch that.
cook chicken in a large skillet over medium heat and add onion, garlic, soy sauce (which i didnt have - so after much googling, i ended up make shifting some soy sauce out of worcestershire sauce and water with a 4:1 ratio. oh wait, thats the hairstylist in me talking. okay, a lot of sauce with a little water. just enough to look slightly translucent.), hoisin sauce (which i didnt have as well. google told me to mix equal parts of ketchup and molasses. so i squirted some ketchup in the measuring cup and covered it with water and sugar) , vinegar and chili sauce. cook until the meat is almost done and then add peanuts, about 2 minutes. when the chicken is done cooking, stir in sesame oil
.

arrange lettuce leaves on the plate.











then, spoon meat mixture in center.










roll those babies up and eat them like a burrito.
a happy husband healthy burrito.











and they were totally yum! it didnt taste any different from the ones i've had before even with all the substitutions. and we were full but without that "i want to kill myself with regret" feeling. man, i love google.

    i just got a GIGANTIC head of napa cabbage.. may have to try this with all of the leftovers i'm going to have... :)
